Professions are very important part of New World. Withouth high level of some professions you can't craft rare resources for unique and very powerful weapon or armor. You also can't get these resources from open world.
Professions leveling is one of the most routine processes in New World. It might take some days to up profession that you need to max level. On high level it can be really big problem that without high profession level you can't get powerful weapon for PvP or end game activities.

Here is a basic understanding of the New World Crafting Skills.
Unlike other MMOs, the New World crafting skills system allows characters to specialize in multiple skill sets. The crafting system is so big in the game, a player could level up as much as they like through crafting, without completing quests and killing monsters.
Crafting is used to produce your armor, weapons, tools, potions, and other items. The game is still expanding its crafting system and can be overwhelming to a beginner.
New World offers seven different crafting skills and each has its own way of leveling up the skill, and comes with its own features and benefits.
New World has 3 trade skills: Gathering, Refining, and Crafting. Refined materials are used for crafting. As you upgrade your crafted tools, the easier it is to gather, meaning you will have more refined materials to use to craft. The three systems work together.
As each of the three systems builds up to higher levels, the character’s proficiency level increases too.
When choosing which New World crafting boost you would like, you may want to know which skill helps in which area. Let us look at each crafting skill:
The New World Engineering skill gives the character the ability to craft weapons and gather tools, as well as arrows and cartridges. Use the "Workshop" for Engineering.
The New World Weaponsmithing skill gives the character the ability to craft weapons, shields, and honing stones. Use the special forge station for smithing.
The New World Armoring Skill is a profession that offers the ability to craft Armor, Leather Bags, and Oakflesh Balm. Use the “Outfitting station” for Armoring.

The New World Jewelcrafting skill is used to build a profession in jewelry. Use the “Outfitting station” machine
The New World Cooking Skill is used to make tasty meals. The various foods provide health regeneration and mana regeneration along with other buffs. Use the “Kitchen,” or a personal camp to cook.
The New World Furnishing Skill is used as a profession in crafting furniture, trophies, and storage chests. Use the “Workshop” machine to make furniture.
Each skill has more than mentioned above, though, for a beginner, these are the basics to concentrate on for now.

Use your map to figure out what routes are most efficient. Use the longest route possible and find as many high-value nodes as possible. Once you know your desired path, use +luck food and +proficiency boosters while gathering along the route until your bags are full. Waiting for the nodes to respawn takes more time.
The time it takes to gather certain items for each skill is long, and the process is tedious. Although it may sound simple, some crafts have higher requirements and need specific materials to craft.
